We don’t generally roast Italian, but it’s now back by popular demand—or perhaps by the demand of the vocal minority.  One man’s Italian roast is another man’s burned coffee.  It been roasted until the oils have come out of the bean, then the oils have been burned off, leaving a dry, black bean.  Buyer beware:  If you don’t know what Italian roast is, odds are you want a lighter roast.
